​What the Pate' A Choux ?

Pate a Choux is your dough for cream puffs, profiteroles, and eclairs. It starts out as a cooked mixture of milk, flour and butter. 
​​You have to cook the liquids out in this mixture so that the maximum amount of eggs can be incorporated. ​ The more eggs you can add to this, without causing it to lose its shape, the lighter and more hollow your baked puff will be.
​Pate a Choux, also known as choux paste, is more of a thick paste than a dough or even a ​batter. Instead of spreading into a pan, you have to use a pastry bag to 'pipe' the batter into shapes.​

For anyone who knows me, it's no secret how much I love to celebrate the Christmas holiday season.  As we give honor recognizing the true meaning of Christmas as the day we celebrate the birth of Jesus Christ.

Having children, over the years,  I became full blown Martha Stewart during the holidays.

Raspberry Filled Cake with Rose Buttercream

A Pink Cake for Ebony​

The cake is the Vanilla Milk Cake, a favorite go-to cake because it's so easy to make and so very moist. The rose buttercream is simplyItalian Buttercream with
​ rose water added to it. 

Food grade Rose Water is
 water flavored by steeping rose petals in water. It has the most distinctive taste that I can only describe as fragrant and light. It taste just like it smells, beautifully rosy and adds  an extra elegance
to your buttercream.


The cake topper and flowers were made with Rolled Marshmallow Fondant.Because I was giving the cake away as a gift, it didn't need to be such a big cake, so I used a 6" round cake pan. Perfect for serving up to ten people.

The Pastry Bag

The pastry bag is one of the most used tool  in all of culinary.  Second to the knives. Especially in the bakeshop. The whole design and make up of the bag allows the chef to neatly and efficiently add their fillings. 

The pastry bag also help to ice, design and finish a cake. ​Without the pastry bag, it would be really hard to pipe macaron batter onto the cookie sheet. ​Although, I can think of at least two other ways.

​Although it'd be nice, I am not receiving any gifts from the KitchenAid company. This is an honest testimony, out of my own experiences of over 30 years from actually using the Kitchen Aid brand of 
mixers.

Yes, there are others out there and I've tried nearly all of them. I've used the Hamilton Beach and the Sunbeam. I had myself a little Black & Decker handheld mixer.  I even remember using one of those manual rotary egg beaters to make  a cake, but they were hell to use for cookie dough.
