Raspberry Cake
with Rose  Buttercream

The Miss Lady Cake
 The cake is the Vanilla Milk Cake, a favorite go-to cake because it's so easy to make and so very moist. The rose buttercream is simply Italian Buttercream with the addition of rose water. 

Food grade Rose Water is
 water flavored by steeping rose petals in water. It has the most distinctive taste that I can only describe as fragrant and light. It taste just like it smells, beautifully rosy and adds  an extra elegance to your buttercream.

The cake topper and flowers were made with Rolled Marshmallow Fondant. Because I was giving the cake away as a gift, it didn't need to be such a big cake, so I used a 6" round cake pan. Perfect for serving up to ten people.

RASPBERRY CAKE WITH ROSE  BUTTERCREAM

I made this cake as a baby gift for my young neighbor. Who is a hard working mom of two beautiful little girls. I've known her since she was this skinny little,  only child herself. ​ A sweet and friendly child who'd always come by to play with my daughter during our ​winter
​visits to Florida many years ago.

Once we'd became neighbors, she'd already gained a little sister, who happened to be only one month older than my youngest child. So, it's been a delight watching her and her sister  grow up with my children. There's a bond that last when kids grow up together like that. When you feel like family. I have many 'adopted' nieces and nephews
in my neighborhood.

It doesn't seem like it was that long ago when I was, myself,  a young wife with babies. In those days I found myself hungry for the wisdom of my mother, my maternal grandmother and aunts.

​It's like passing the torch. I think we should support our young women with love, and tune them in to the reception of our wisdom of life experiences. ​Which is why I was inspired to make a cake for her as an expression of Love so as to bless her and her children and  to show her that​ I love and support her.

​To Make this Cake You'll Need

You'll need to prepare the items below, to begin this project. You can use this design with a pre-made cake.
Oh yes. Did you know a bakery will sell you a naked cake ? You can also buy the icing and the filling from the grocery store. But what's the fun in that? The 'love' comes out of the creative touch from your own hands.

The Step by Steps

Preparing the Cake​

  • Trim the crust from the top of your cake, if necessary. 
  • Slice each cake layer in half. Set the halves aside.
  • Dot your cake board with a dab of frosting
  • Lay down your first cake layer.

I usually start with the bottom portion of the cake layer, bottom facing down for my first layer.

Filling the Cake​

  • With a pastry brush, dab simple syrup over the surface of the cake.  Just under 1/4 cup of syrup.
  • With your buttercream filled piping bag, make a 'well' around the perimeter of the cake.
  • Fill that well with your filling.
  • Repeat these steps with the remaining layers.

Frosting the Cake​

  • Using a cake spatula, apply a crumb coat over the cake, then refrigerate for 30 minutes. You can start making the flowers in Step 4 at this time.
  • After 30 minutes, take the cake out and frost the cake in two thin layers. Refrigerating for 10 minutes between layers.
  • Use a  cake icing  smoother for a smooth even finish on your cake.

Fun with Fondant​

           Fondant Recipe 
  • Using about 5 oz of fondant, divide it into 3rds, add pink food color gel and knead the fondant to blend. 
  • Cut out some fondant flowers in 3 different sizes, using a​ multi flower cutter set.
  • ​ I used varying shades of pink to create a flowered ombre look for this cake.

What is Sugar Glue?

"Make your own 'sugar glue' using a pinch of fondant, 1/2 teaspoon of water. Microwave 15 - 20 seconds, then stir. If too thick, add just a little more water.
​
​ If you have gumpaste,  take a pinch of gumpaste, add about a teaspoon of water, in a small bowl. Allow the gumpaste glue to sit for an hour, then stir before using."

Fondant Flowers

  • Lay your cut flower on your sponge flower form.
  • With your round fondant tool, press into the flower to give it a little shape.
  • ​Using sugar glue, attach the flowers from the bottom up, starting with the largest flowers.
  • Glue sugar pearls onto the flowers, creating its center.

​Making figurines is not my expertise. But I can promise you it is a fun adventure if you like to be creative. This is also a very time consuming project. It can take hours. Just have fun trying. Fondant is fun and you can get
​ really creative with it. 

Cake Journal has a wonderful tutorial for making a teddy bear cake topper made out of fondant. You can use this same concept in this tutorial to make this baby cake topper, too.

​​Fun Figures by Lorraine McKay is a great book offering detailed instructions on making cake toppers. Because I made the baby, I had to have a baby blanket, right? Well, two for this one. One for the baby to sit on, and one to cover up how ugly 'my baby' really came out.

This is a  lovely cake, with its tart and sweet raspberry cream filling. There is just enough sweetness in the buttercream. The cake is smooth and moist. The fondant flowers are just like little candies.  Plenty of sweetness to share.
