Cookies Are My Favorite Cakes
Cookies as we know them today, came about almost by accident. There was a time in history when chefs didn't have instruments to gage the oven's temperature. To ascertain whether the oven was hot enough for the cake to bake, the pastry chef would drop spoonfuls of cake batter onto the oven floor.
Since nothing is wasted in the bake shop, it's easy to see how the chefs found uses for these 'little cakes'. Today's cookies are simply a variation of those original koekje.

What's obvious is that at some point in history the formula of eggs, sugar, and flour to make cakes was adjusted to the cookies we all know today. There is one cookie you can buy today that seems to me as the closest cookie to the original test cookie...The Black & White. The most expensive cookie in the grocery store.

Whenever my grandmother made a cake, there'd be that dome she'd always cut off the top of the cake, to level out her cake layer. Well, let me tell you, we children would be standing there waiting on her to cut off that 'cookie cake' every chance we get. That's what we called that scrapped piece of cake. It was like eating a soft cookie. |
