Journey With Me !

Cookies Are My Favorite Cakes

Cookies as we know them today, came about almost by accident. There was a time in history when chefs didn't have instruments to gage the oven's temperature. To ascertain whether the oven was hot enough for the cake to bake,  the pastry chef would drop spoonfuls of cake batter onto the oven floor.

Since nothing is wasted in the bake shop, it's easy to see how the chefs found uses for these 'little cakes'.  Today's cookies are simply a variation of those original koekje.

But, who needs another history lessons on cookies? I'm more interested into the depth of how much you can do with just one cookie dough formula.
What's obvious is that at some point in history the formula of eggs, sugar, and flour to make cakes was adjusted to the cookies we all know today. There is one cookie you can buy today that seems to me as the closest cookie to the original test cookie...The Black & White. The most expensive cookie in the grocery store.
A Great Start  !

Basic Sugar Cookie Dough

The formula for this cookie is very close to the tart dough. It's the addition of the eggs that make it the perfect dough for cutting and molding.

This basic sugar cookie dough can create several varieties of sugar cookies.

Did You Drop That Cookie ?

Drop cookies, behind bar cookies, are some of the easiest cookies to make.

There's no rolling or cutting of any dough.

Once you make your dough, all you do is scoop and bake.

Whenever my grandmother made a cake, there'd be that dome she'd always cut off the top of the cake, to level out her cake layer.

Well, let me tell you, we children would be standing there waiting on her to cut off that 'cookie cake' every chance we get.

That's what we called that scrapped piece of cake. It was like eating a soft cookie.

Meringue Based Cookies

Meringue based cookies are cookies that use French meringue as its foundation.

French meringue is simply whipped egg whites and sugar. When baked, the meringue contributes to the spongy texture we like in these cookies.

Cake Mix Cookies

Cake mix cookies are just simply convenient when you have a taste for cookies, but don't feel like measuring out ingredients.

Cake mix cookies are even more convenient when you have a box of cake mix already waiting in your pantry.

Way Beyond Just a Cookie

Cookies are so versatile. You not only can eat them, or decorate them.
You can even use them for the decoration. Cookies can even become the dessert themselves.
